I baked these for our Father’s Day Fishing Adventure. Fueled with my usual enthusiasm for these outtings, I set out a meal plan with snack baking lists. Really, I love camping and day trips just for the food aspect. I made gourmet sandwiches and baked these brownies for dessert. I had dreams of us eating on the shores of the river…
In reality, our day can be summed up by the following: Lost-in-the-Laurentians, rain-and-mud-filled, not-enough-clothing-for-wet-kids, zero-fish-caught, Father’s-Day-Fiasco-2013.
Nonetheless, the brownies were eaten inside the car, while we wrapped the shivering kids in blankets (I didn’t even think of bringing a towel). They were a huge hit, for the biggies and the smallies:
Chocolate Zucchini “Brownies”
Makes about 35 small brownies
Recipe stolen from my sister
1/4 cup oil ( I used grapeseed)
1/2 cup sugar
1 cup flour
1/4 cup cocoa
1 1/2 tsp baking soda
1/2 tsp salt
2 cups shredded zucchini (about 1 medium vegetable)
1 cup chocolate (baking, chips, medallions… whatever you have or like!)
Preheat oven to 350 and grease a square 9″ x 9″ (or whatever else pan you have- changing the dimensions will affect the baking time tough)
Mix egg, oil, sugar and vanilla. Add all dry ingredients, including chocolates. Mix up and don’t be worries about how dry it is. Throw in the zucchini, mix a little and let sit for a few minutes. Then mix it all up with a fork.
Throw it into your pan and bake it for between 35-40 minutes.
